HEALTH DEPARTMENT RULES
ALL WORKERS
- The environmental inspector will inspect the Cafe daily. Two citations for the same violation could result in closure.
- Always WASH HANDS before beginning or upon returning to work. Use the sink in the storeroom, not in the bathroom or the pie serving area. Plastic serving gloves are not required, but available if desired.
- Keep cold foods cold. Ensure freezers are 32 degrees or colder. Ensure refrigerators are 45 degrees or colder. Keep doors shut tightly.
- Keep hot foods hot. Ensure crockpots are > 140 degrees.
- Hair nets, hats, scarves, or some type of head covering must be worn in the food service area at ALL times.
- Keep everything as clean as you would like to see it when you are eating in public.
- Keep plastic dishpan with water and Clorox (<1 cap full, 50 PPM) for table-wiping rags. DO NOT leave rags lying out on counters - the chlorine evaporates.
- Workers must not eat while working. Move to dining areas for eating. A beverage may be consumed at the workstation provided it is covered and stored out of sight of customers.
- Wash hands after using the restroom,
handling money, or returning to the food preparation
and serving areas.
COOKS
- Ensure that crock pots for chili and hot dogs are at 140 degrees or higher.
PIE SERVERS
- Rinse water in the right sink must be kept at 50 PPM chlorine. (Approximately 1 cap full of Clorox to four inches of water). Do not run additional water in rinse section. Water tester strips are available to test the rinse water.
- Pie tins, utensils, and etc. are washed, then dipped in the rinse water and placed in the dish drainer to air dry.
- Do not let dirty dishwater stand in the left sink.
- Pies must be kept in the pie pan and covered until served.
- When not in use, the ice cream scoops are kept in an empty, dry container. Do not place in a container of water.
COUNTER PEOPLE
- Do not handle cups by the tops.
- The ice scoop handle should not touch the ice. Do not leave the scoop in the ice chest, but put it on a plate.
- With the exception of the window person, try not to handle money. Leave that to the cashier.
CASHIERS
- Since you are handling money, do not handle customer orders!
