Workday and Cleanup Notes

Workday

Each year we hold a workday to prepare the cafe for the year's operations. Activities include cleaning walls and windows, sweeping and mopping floors, making any necessary repairs, setting up the air conditioner, and other related tasks.

Workday is generally the second Saturday before opening day of the fair and runs approximately 8:30 AM to 1:00 PM. A dozen individuals are needed to help with workday activities. Contact the Maintenance and Workday Coordinator to help.

Utilities must be turned on prior to workday!

  • Workday Tasks

  • General cleaning of walls, windows, floors, walks, bathroom, freezers and refrigerators. Make repairs as necessary.
    Prepare menu boards Wash all pots & pans and utensils.
    Setup A/C
    Cooler pads - 2 @ 20"X32", 1 @ 26"X32"
    Paint as necessary.
    Setup Coke Stand outside
    (Manager may arrange ahead of time w/Coke.)
     
       

    Opening Setup

    The cafe receives perishable and general supply stocks 1-2 days before the fair. Someone must be on site all day long each of these days to accept deliveries. During this time final preparations are made for opening, including additional cleaning, washing pots and pans, stocking inventory, setting up tables outside and inside (sledgehammer needed), moving freezer from church to cafe, and last minute tasks.

    Second cleaning of counters, shelves, floors, etc. Stock inventory as it arrives.
    Wash all pots & pans and utensils. Setup cash register.
    Clean pie cabinet and shelves. Setup outside counter top.
    Setup pie serving area - magnets, utensils, forms, etc. Check that everything is in place for servers. Pie boards will be installed separately. Move freezer from church to cafe and setup outside.
    Setup grill area - instructions, utensils, crockpots, etc. Check that everything is in place for cooks. Setup outside picnic tables and anchor in place. (Sledgehammer required.)
    Clean grill. Light pilots. See Cook Instructions. Setup tables and chairs inside. Cover with tablecloths.
    Calibrate grill thermometers.  
    Hang curtains.  
    Hang signs and menu boards - inside and outside.  
    Get supplies stored at church and transport to cafe. (Manager) Be present for inspections and deliveries.

    Seasonal Shutdown

    The day after the fair, the cafe is shutdown and prepared for off-season storage.

    Final cleaning Wash all pots & pans and utensils and bag for storage at church or cafe.
    Return of any unopened non-perishable goods to Zanios. Store picnic tables, A/C, pie carriers, and freezers in cafe.
    Return unused bread items to Rainbo. Prepare refrigerators and freezers for storage.
    Return unused Coke syrup to Coca-Cola
    Sell partially used product to permanent vendors.
    Cook Instructions.
    Inventory excess stock in preparation for next year.  
    Pay bills - Coke, Zanios (See Specal Inventory Notes.)  
    Dispose of perishables (i.e pies to Rescue Mission, etc.).  
    Take down signs, menus, and etc. bag for storage.
